Publisher Note

“Lo Va” is the word used to refer in short to the Mercado Mayorista de Lo Valledor, the largest fruit and vegetable trading center in Santiago, Chile. This publication compiles the testimonies of a group of people who for two years practiced food recovery inside this market. Accompanied by the photographic record made by Daniela Poch, these testimonies propose a critical look at the processes of food production and distribution in our country, taking into account that Chile is a producer and exporter of fruits and vegetables, but about 3.7 million tons of food are wasted annually. That is, they do not become food for the population.
